1 small onion, finely chopped

2 garlic cloves, minced

300g (10 oz) ground beef or lamb (or chicken/turkey)

1 tsp salt

Β½ tsp black pepper

Β½ tsp paprika (optional)

Β½ tsp dried oregano or thyme
-
2 tbsp tomato paste (or ΒΌ cup canned tomatoes)
-
Β½ cup grated mozzarella or cheddar cheese
-
1 tbsp fresh parsley or coriander (optional)
For the Pastry:

1 sheet puff pastry (thawed if frozen)
-
1 egg (for egg wash)
-
Optional: sesame seeds or nigella seeds for topping

1. Prepare the Filling

Heat olive oil in a skillet over medium heat.

SautΓ© onions until translucent, then add garlic.

Add minced meat and cook until browned, breaking it up with a spoon.

Stir in tomato paste, salt, pepper, and herbs. Cook for 5β7 minutes until well combined and thickened.

Let the filling cool slightly, then mix in grated cheese and fresh herbs.
2. Assemble the Pastries

Preheat oven to 200Β°C (400Β°F).

Roll out the puff pastry and cut into 8β10 equal squares or rectangles.

Place a spoonful of filling in the center of each square.

Fold into triangles or rectangles and seal the edges with a fork.

Place pastries on a parchment-lined baking tray.
3. Bake

Beat the egg and brush over the top of each pastry.

Sprinkle with sesame or nigella seeds if using.

Bake for 20β25 minutes or until golden brown and puffed.
