Ingredients:
1 rotisserie chicken, shredded (about 4 cups)
1 (12-ounce) package of stuffing mix (your choice)
1 cup chicken broth
1 cup cream of chicken soup (or homemade)
1 cup sour cream
1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
1 cup shredded cheddar cheese (optional)
Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish and set it aside.
Prepare the Stuffing: In a medium bowl, combine the stuffing mix with chicken broth. Stir until the stuffing is fully moistened, then set aside.

Assemble the Casserole: Spread the chicken mixture evenly across the bottom of the prepared casserole dish. Top it with the prepared stuffing mixture, ensuring an even layer. If desired, sprinkle shredded cheddar cheese on top.
Bake the Casserole: Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown and bubbling.
