🥙 Roasted Veggie and Hummus Wraps

📝 Ingredients (Makes 4 Wraps):

  • 2 cups chopped vegetables (e.g. bell peppers, zucchini, red onion, mushrooms, carrots)

  • 1 tbsp olive oil

  • 1 tsp Italian seasoning or cumin + paprika for a smoky vibe

  • Salt & pepper to taste

  • 1 cup hummus (classic, roasted red pepper, or garlic flavor)

  • 4 whole wheat tortillas or wraps

  • 1 cup baby spinach or mixed greens

  • Optional: crumbled feta, sliced avocado, hot sauce, or balsamic glaze


👩‍🍳 Instructions:

1. Roast the Veggies:

  • Preheat oven to 400°F (200°C).

  • Toss chopped veggies with olive oil, seasoning, salt & pepper.

  • Spread on a baking sheet and roast for 20–25 minutes, stirring once halfway through, until tender and slightly browned.

2. Assemble the Wraps:

  • Warm the tortillas slightly (microwave 10–15 seconds or heat in a dry skillet).

  • Spread about 2–3 tablespoons of hummus on each wrap.

  • Add a layer of spinach or greens.

  • Top with a generous scoop of roasted veggies.

  • Add optional extras like feta, avocado, or sauce.

3. Wrap & Serve:

  • Fold in the sides, then roll up tightly from the bottom.

  • Slice in half and serve warm or chilled.

  • Use gluten-free wraps for a GF version.

  • Add grilled chicken or chickpeas for extra protein.
