Roasted Beet Rounds with Honey & Cranberries 🥗✨

🥗 Ingredients:

  • 3 medium fresh beets, peeled and sliced into ½-inch rounds

  • 2 tbsp olive oil

  • Salt & black pepper, to taste

  • 2 tbsp honey (plus more for drizzling)

  • ¼ cup dried cranberries

  • ¼ cup crumbled goat cheese (or feta, optional)

  • 1 tbsp chopped fresh parsley or mint (optional, for garnish)

  • 1 tsp balsamic glaze (optional, for extra flavor)


🔥 Instructions:

1. Preheat Oven

  • Preheat oven to 400°F (200°C).

  • Line a baking sheet with parchment paper.

2. Prep Beets

  • Peel the beets and slice into ½-inch thick rounds.

  • Pat them dry with a paper towel for better roasting.

3. Season

  • Place beet rounds on the baking sheet.

  • Brush both sides with olive oil and season lightly with salt & pepper.

4. Roast

  • Roast for 20–25 minutes, flipping halfway through, until the beets are tender and edges slightly caramelized.

5. Add Honey & Cranberries

  • Remove the baking sheet from the oven.

  • Drizzle honey over warm beets and sprinkle cranberries on top.

  • Return to the oven for another 5 minutes to let the honey glaze and cranberries soften.

6. Serve

  • Transfer beet rounds to a serving plate.

  • Top with crumbled goat cheese (optional), drizzle with a little extra honey or balsamic glaze, and garnish with fresh parsley or mint.
