Roasted Beet Rounds with Honey & Cranberries 🥗✨
🥗 Ingredients:

3 medium fresh beets, peeled and sliced into ½-inch rounds

2 tbsp olive oil

Salt & black pepper, to taste

2 tbsp honey (plus more for drizzling)

¼ cup dried cranberries

¼ cup crumbled goat cheese (or feta, optional)

1 tbsp chopped fresh parsley or mint (optional, for garnish)

1 tsp balsamic glaze (optional, for extra flavor)
🔥 Instructions:
1. Preheat Oven

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.
2. Prep Beets

Peel the beets and slice into ½-inch thick rounds.

Pat them dry with a paper towel for better roasting.
3. Season

Place beet rounds on the baking sheet.

Brush both sides with olive oil and season lightly with salt & pepper.
4. Roast

Roast for 20–25 minutes, flipping halfway through, until the beets are tender and edges slightly caramelized.
5. Add Honey & Cranberries

Remove the baking sheet from the oven.

Drizzle honey over warm beets and sprinkle cranberries on top.

Return to the oven for another 5 minutes to let the honey glaze and cranberries soften.
6. Serve

Transfer beet rounds to a serving plate.

Top with crumbled goat cheese (optional), drizzle with a little extra honey or balsamic glaze, and garnish with fresh parsley or mint.
