🍝 Ravioli with Cherry Tomatoes & Asparagus
🛒 Ingredients:
For the Pasta:

1 package (9–12 oz) cheese or spinach ravioli (store-bought or homemade)
Vegetables:

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed and cut into 2-inch pieces

2 tbsp olive oil or butter

2 cloves garlic, minced
-
Fresh basil leaves, torn or chopped

Salt & freshly ground black pepper
-
Optional: Red pepper flakes for heat

Optional: Grated parmesan cheese for garnish
👩🍳 Instructions:
1. Cook the Ravioli:

Boil ravioli according to package instructions (usually 4–6 minutes).

Drain and set aside, reserving ½ cup of pasta water.
2. Sauté the Veggies:

In a large skillet, heat olive oil or butter over medium heat.

Add minced garlic and sauté for 30 seconds.

Add asparagus and cook for 3–4 minutes until just tender.

Add cherry tomatoes and cook another 2–3 minutes, until they soften slightly.
3. Toss Everything Together:

Add the cooked ravioli to the skillet with the veggies.

Add a splash of reserved pasta water if needed for moisture.

Stir in chopped fresh basil, season with salt, pepper, and optional chili flakes.
4. Serve:

Plate immediately and garnish with more basil and/or parmesan if desired.

Use lemon zest or a splash of white wine in the pan for a zesty kick.
