🍝 Ravioli with Cherry Tomatoes & Asparagus

🛒 Ingredients:

For the Pasta:

  • 1 package (9–12 oz) cheese or spinach ravioli (store-bought or homemade)

Vegetables:

  • 1 cup cherry tomatoes, halved

  • 1 cup asparagus, trimmed and cut into 2-inch pieces

  • 2 tbsp olive oil or butter

  • 2 cloves garlic, minced

  • Fresh basil leaves, torn or chopped

  • Salt & freshly ground black pepper

  • Optional: Red pepper flakes for heat

  • Optional: Grated parmesan cheese for garnish


👩‍🍳 Instructions:

1. Cook the Ravioli:

  • Boil ravioli according to package instructions (usually 4–6 minutes).

  • Drain and set aside, reserving ½ cup of pasta water.

2. Sauté the Veggies:

  • In a large skillet, heat olive oil or butter over medium heat.

  • Add minced garlic and sauté for 30 seconds.

  • Add asparagus and cook for 3–4 minutes until just tender.

  • Add cherry tomatoes and cook another 2–3 minutes, until they soften slightly.

3. Toss Everything Together:

  • Add the cooked ravioli to the skillet with the veggies.

  • Add a splash of reserved pasta water if needed for moisture.

  • Stir in chopped fresh basil, season with salt, pepper, and optional chili flakes.

4. Serve:

  • Plate immediately and garnish with more basil and/or parmesan if desired.


🌿 Variations:

  • Use lemon zest or a splash of white wine in the pan for a zesty kick.

  • Try mushroom ravioli for a richer flavor.

  • Add pine nuts or toasted walnuts for crunch.
