🌾 Ingredients:

1 cup oatmeal

~1 glass warm water (for soaking the oats)

½ medium pumpkin (about 800 g), peeled and chopped

1 tbsp sweetener (optional — like stevia, honey substitute, or monk fruit)
🍞 Instructions:

Soak the oats:
Pour warm water over the oatmeal and let it soak for about 10–15 minutes until soft. -
Prepare pumpkin:
Cut pumpkin into chunks and steam or microwave until tender (about 10 minutes). -
Blend:
In a blender, combine soaked oats, cooked pumpkin, and sweetener.
Blend until smooth and thick (like a batter). -
Pour into pan:
Line a small loaf pan with parchment paper or use a silicone mold.
Pour the batter in and smooth the top. -
Bake:
Bake at 180°C (350°F) for 35–45 minutes, until firm and lightly golden on top. -
Cool & serve:
Let it cool completely before slicing.
Enjoy it plain or with peanut butter, yogurt, or fruit on top!
