Pizza Pepperoni Bites
1 cup almond flour
1 teaspoon baking powder
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon salt
1 large egg
1 cup shredded mozzarella cheese
1/2 cup sliced pepperoni
1/4 cup sugar-free marinara sauce (for dipping)
1 tablespoon olive oil (for greasing)
Preheat the oven to 400°F. Grease a baking sheet with olive oil or line it with parchment paper.
In a mixing bowl, combine almond flour, baking powder, Italian seasoning, garlic powder, and salt. Mix well.
Add the egg to the dry ingredients and stir until combined.
Melt the mozzarella cheese in a microwave-safe bowl for about 30-45 seconds until gooey. Stir the melted cheese into the mixture until well incorporated.
Fold in the sliced pepperoni.
Using a tablespoon, scoop the mixture and form small balls. Place them on the prepared baking sheet, spacing them about 1 inch apart.
Bake in the preheated oven for 12-15 minutes, or until golden brown.
Remove from the oven and let cool slightly before serving with sugar-free marinara sauce for dipping.
