🥗 Pickled Beets with Spiced Vinegar Dressing
A vibrant, sweet-tangy side dish with a warm spiced kick — perfect for salads, sandwiches, or a classic side to hearty meals.
🧾 Ingredients:

8 medium fresh beets

1 cup vinegar (white or apple cider vinegar)

1/2 cup granulated sugar

1 1/2 teaspoons whole cloves

1 1/2 teaspoons whole allspice

1/2 teaspoon salt

Step 1: Cook the Beets

Scrub the beets clean and trim the tops, leaving about 1 inch of the stem (to prevent bleeding).

Place the beets in a large pot or Dutch oven. Add water to fully cover them.

Bring to a boil, then reduce heat and simmer covered for 25–30 minutes, or until fork-tender.

Drain and cool slightly. Peel the skins off (they should slide off easily). Slice the beets into rounds or wedges and place them in a heat-safe bowl or jar.
Step 2: Make the Spiced Vinegar Dressing

In a small saucepan, combine:

1 cup vinegar

1/2 cup sugar

1 1/2 tsp whole cloves

1 1/2 tsp whole allspice

Bring to a boil over medium-high heat, stirring until sugar dissolves.

Let the mixture boil gently for 5 minutes to infuse the spices.
Step 3: Combine and Chill

Pour the hot vinegar mixture over the sliced beets, making sure they’re fully submerged.

Let cool slightly, then cover and refrigerate for at least 1 hour (overnight is best for full flavor).
