Crispy, golden puff pastry filled with juicy steak, sautéed peppers and onions, and melty provolone cheese.
⭐ Ingredients:
For the Filling:

1 lb ribeye steak, thinly sliced (or use sirloin if preferred)

1 tbsp olive oil

1 small yellow onion, thinly sliced

1 green bell pepper, thinly sliced

1 red bell pepper, thinly sliced

Salt & pepper to taste

1 tsp garlic powder
-
1/2 tsp Worcestershire sauce (optional but recommended)
For Assembly:

1 sheet puff pastry, thawed

6–8 slices provolone cheese (or white American cheese)

1 egg (for egg wash)

1 tbsp water
🔥 Instructions:
1. Prepare the Filling:

In a large skillet, heat olive oil over medium-high heat.

Add onions and bell peppers. Sauté for 6–8 minutes until softened and lightly caramelized.

Add sliced steak, season with salt, pepper, garlic powder, and Worcestershire sauce.

Cook for 3–5 minutes, just until the steak is no longer pink. Don’t overcook.

Remove from heat and let the mixture cool completely (important so it doesn’t make the pastry soggy).
2. Assemble the Wellington:

Preheat oven to 400°F (200°C).

Roll out puff pastry on a lightly floured surface or parchment paper to smooth any creases.

Place a layer of provolone cheese slices in the center, leaving a 1.5–2-inch border on all sides.

Spoon the cooled steak and pepper mixture evenly over the cheese.

3. Seal and Wrap:

Fold the sides of the puff pastry over the filling, then fold the ends over, pressing to seal.
