Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 6 Tablespoons (85 g) unsalted butter, melted and slightly cooled
  • ½ cup (130 g) creamy no-stir peanut butter
  • ¾ cup (150 g) packed light brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg, room temperature
  • ¾ cup chocolate chips, M&M’s or nuts (optional)


Instructions

 

  1. Prepare Your Workspace: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt until well combined.
  3. Combine Wet Ingredients: In a large mixing bowl, mix the melted butter and peanut butter until smooth. Add both brown sugar and granulated sugar, then beat until well incorporated and slightly fluffy. The mixture should be smooth and creamy.
  4. Add Remaining Wet Ingredients: Beat in the vanilla extract and egg until fully combined, scraping down the sides of the bowl as needed.
  5. Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  6. Add Mix-ins: If using, fold in the chocolate chips, M&M’s, or nuts by hand using a spatula.
  7. Shape the Cookies: Roll the dough into 1½-inch balls (about 2 tablespoons each) and place on the prepared baking shee
