🍗 Pan-Seared Chicken Thighs with Mashed Potatoes, Herb Gravy & Roasted Carrots

📝 Ingredients

For the Chicken:

  • 4 bone-in or boneless chicken thighs (skin-on preferred)

2️⃣ Make Mashed Potatoes

  1. Boil potatoes in salted water for 15–18 minutes until soft.

  2. Drain and mash.

  3. Add butter, warm milk, salt, pepper, and garlic.

  4. Mash until smooth and creamy. Cover to keep warm.


3️⃣ Cook the Chicken

  1. Season chicken with salt, pepper, paprika, and garlic powder.

  2. Heat olive oil in a pan over medium-high.

  3. Place chicken skin-side down and sear for 5–6 minutes until crispy.

  4. Flip and cook another 5 minutes.

  5. Add butter and minced garlic. Sauté 30 seconds.
