Oat, Apple, and Carrot Cake
Ingredients:

1 cup oats (or oat flour)

2 grated apples

2 grated carrots
-
3 eggs (or flax eggs for vegan)

1/2 cup honey or crushed dates

1 tsp cinnamon

1 tsp baking powder

Pinch of salt

Optional: nuts or seeds
Instructions:

Preheat oven to 350°F (175°C).

Mix oats, baking powder, cinnamon, salt, and nuts/seeds.

In another bowl, whisk eggs, honey, grated apples, and carrots.

Combine wet and dry ingredients.

Pour into greased pan or muffin tin.

Bake 25-30 mins (cake) or 15-20 mins (muffins).
