3–4 ripe tomatoes (Roma or vine-ripe), finely chopped

2 tbsp sun-dried tomatoes in oil, chopped (optional, for richness)

2 tbsp extra-virgin olive oil

1–2 cloves garlic, minced

½ tsp sea salt

Freshly ground black pepper (to taste)

1 tsp balsamic vinegar (optional, for tang)
Herbs & Garnish:

¼ cup fresh basil leaves, finely chopped (plus extra for garnish)

1 tsp dried oregano (optional)

1–2 tbsp grated Parmesan or crumbled feta (optional)

Chili flakes (optional, for heat)

1. Prepare Tomato Mixture:

In a bowl, combine chopped tomatoes, sun-dried tomatoes (if using), minced garlic, salt, pepper, olive oil, and balsamic vinegar.

Add chopped fresh basil and oregano. Stir gently to mix.

Let it sit for 10–15 minutes to allow flavors to meld.
2. Toast the Bread:

Preheat oven to 375°F (190°C), or heat a grill pan.

Slice bread into ½-inch thick slices.

Brush one side of each slice with olive oil.

Toast in oven (5–7 minutes), grill pan, or under broiler until golden and crisp.

While warm, rub the oiled side of bread with cut garlic halves for aroma.
