🫓 Mediterranean Tomato Basil Garlic Bread

✅ Ingredients:
For the Bread Base:
- 
1 rustic baguette or ciabatta loaf (or any crusty bread) 
- 
2–3 tbsp olive oil 
- 
1 garlic clove, halved (for rubbing) 
Tomato Topping:
- 
3–4 ripe tomatoes (Roma or vine-ripe), finely chopped 
- 
2 tbsp sun-dried tomatoes in oil, chopped (optional, for richness) 
- 
2 tbsp extra-virgin olive oil 
- 
1–2 cloves garlic, minced 
- 
½ tsp sea salt 
- 
Freshly ground black pepper (to taste) 
- 
1 tsp balsamic vinegar (optional, for tang) 
Herbs & Garnish:
- 
¼ cup fresh basil leaves, finely chopped (plus extra for garnish) 
- 
1 tsp dried oregano (optional) 
- 
1–2 tbsp grated Parmesan or crumbled feta (optional) 
- 
Chili flakes (optional, for heat) 
👩🍳 Instructions:
1. Prepare Tomato Mixture:
- 
In a bowl, combine chopped tomatoes, sun-dried tomatoes (if using), minced garlic, salt, pepper, olive oil, and balsamic vinegar. 
- 
Add chopped fresh basil and oregano. Stir gently to mix. 
- 
Let it sit for 10–15 minutes to allow flavors to meld. 
2. Toast the Bread:
- 
Preheat oven to 375°F (190°C), or heat a grill pan. 
- 
Slice bread into ½-inch thick slices. 
- 
Brush one side of each slice with olive oil. 
- 
Toast in oven (5–7 minutes), grill pan, or under broiler until golden and crisp. 
- 
While warm, rub the oiled side of bread with cut garlic halves for aroma. 
3. Assemble:
- 
Spoon the tomato mixture generously over each toasted bread slice. 
- 
Garnish with fresh basil, cheese, and chili flakes if using. 
4. Serve Immediately:
- 
Best served warm or at room temperature. 
- 
Pairs well with wine, olives, or a Mediterranean platter.
