Instructions
1. Preheat & prep
Preheat your oven to 200°C / 400°F.
Lightly grease a large baking dish with olive oil.
2. Build the veggie base
Add zucchini, bell pepper, onion, tomatoes, and garlic to the dish.
Drizzle with olive oil, season with salt, pepper, oregano, thyme, and paprika.
Toss gently to coat.
3. Add the cod
Nestle the cod fillets on top of the vegetables.
Season the fish lightly with salt and pepper.
4. Make the creamy sauce
Whisk all sauce ingredients together until smooth.
