🥔 Mediterranean Stuffed Sweet Potatoes with Herb-Garlic Aioli

Fluffy roasted sweet potatoes packed with a savory filling of sautéed spinach, artichoke hearts, and feta, then finished with a zesty herb-garlic aioli. This dish is vibrant, satisfying, and loaded with Mediterranean-inspired flavors — perfect for a meatless main or hearty side!


Ingredients

For the Stuffed Sweet Potatoes:

  • 4 medium sweet potatoes

  • 2 cups fresh spinach, chopped

  • 1 cup artichoke hearts, drained and chopped

  • 1 cup feta cheese, crumbled

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

For the Herb-Garlic Aioli:

  • ½ cup mayonnaise

  • 1 tablespoon lemon juice

  • 2 garlic cloves, minced

  • 1 tablespoon fresh herbs (such as dill, parsley, or basil), chopped

  • Salt and pepper, to taste


Instructions

Step 1: Prepare the Sweet Potatoes

  1. Preheat your oven to 400°F (200°C).

  2. Pierce each sweet potato a few times with a fork and place them on a baking sheet.

  3. Bake for 45–60 minutes, or until tender when pierced with a knife.


Step 2: Make the Filling

  1. In a skillet, heat 2 tablespoons olive oil over medium heat.

  2. Add minced garlic and sauté for about 1 minute, just until fragrant.

  3. Add chopped spinach and cook until wilted (about 2–3 minutes).

  4. Remove from heat and transfer to a mixing bowl.

  5. Stir in chopped artichoke hearts and crumbled feta cheese.

  6. Season with salt and pepper to taste.


Step 3: Stuff the Sweet Potatoes

  1. Once the sweet potatoes are cool enough to handle, slice them open lengthwise.

  2. Use a fork to lightly fluff the inside of each potato.

  3. Spoon the spinach-artichoke-feta mixture generously into each potato.


Step 4: Make the Herb-Garlic Aioli

  1. In a small bowl, mix together:

    • ½ cup mayonnaise

    • 2 minced garlic cloves

    • 1 tablespoon chopped fresh herbs
