🥗 Mediterranean Stuffed Acorn Squash with Quinoa, Cranberries & Feta

🍽️ Ingredients:

2 medium acorn squash, halved and seeds removed

1 cup quinoa, cooked

1/3 cup dried cranberries

1/3 cup crumbled feta cheese

1/4 cup chopped walnuts or almonds (optional)

2 tbsp olive oil

1/2 tsp sea salt

1/2 tsp black pepper

1/2 tsp garlic powder

1 tbsp lemon juice

2 tbsp fresh parsley, chopped
🔥 Instructions:

Preheat oven to 400°F (200°C).

Brush acorn squash halves with olive oil, sprinkle with salt, pepper & garlic powder.

Roast cut-side down on a baking tray for 30–35 minutes, until tender.

In a bowl, mix cooked quinoa, cranberries, feta, nuts, lemon juice, and parsley.

Stuff the roasted squash halves with the quinoa mixture.

Return to oven for 5–7 minutes to warm through.
