🥗 Mediterranean Stuffed Acorn Squash with Quinoa, Cranberries & Feta

✨ Description:
A cozy and colorful Mediterranean-inspired dish featuring roasted acorn squash stuffed with fluffy quinoa, sweet cranberries, tangy feta, and herbs. Perfect for a healthy, satisfying lunch or dinner!


🍽️ Ingredients:

  • 2 medium acorn squash, halved and seeds removed

  • 1 cup quinoa, cooked

  • 1/3 cup dried cranberries

  • 1/3 cup crumbled feta cheese

  • 1/4 cup chopped walnuts or almonds (optional)

  • 2 tbsp olive oil

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

  • 1 tbsp lemon juice

  • 2 tbsp fresh parsley, chopped


🔥 Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Brush acorn squash halves with olive oil, sprinkle with salt, pepper & garlic powder.

  3. Roast cut-side down on a baking tray for 30–35 minutes, until tender.

  4. In a bowl, mix cooked quinoa, cranberries, feta, nuts, lemon juice, and parsley.

  5. Stuff the roasted squash halves with the quinoa mixture.

  6. Return to oven for 5–7 minutes to warm through.

  7. Serve warm, drizzle with olive oil, and enjoy! 🌿
