🥗 Mediterranean Marinated Cauliflower Salad

Ingredients:
For the Salad:

1 medium head of cauliflower, cut into small florets

1 tbsp olive oil

Salt & pepper, to taste

1/2 cup cherry tomatoes, halved

1/3 cup kalamata olives, pitted & halved

1/4 cup red onion, thinly sliced

1/4 cup fresh parsley, chopped
-
1/4 cup crumbled feta cheese (optional)

1/2 small cucumber, diced
For the Marinade / Dressing:

1/4 cup extra virgin olive oil
-
2 tbsp red wine vinegar or lemon juice
-
1 tsp Dijon mustard
-
1 garlic clove, minced
-
1/2 tsp dried oregano
-
Salt & pepper to taste
Instructions:

Roast the Cauliflower:
Preheat oven to 425°F (220°C).
Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper.
Spread on a baking sheet and roast for 20–25 minutes, until golden and tender. Let cool slightly. -
Make the Dressing:
In a small bowl or jar, whisk together olive oil, red wine vinegar (or lemon juice), Dijon mustard, garlic, oregano, salt, and pepper. -
Assemble the Salad:
In a large bowl, combine the roasted cauliflower, cherry tomatoes, olives, red onion, cucumber, and parsley. -
Marinate:
Pour the dressing over the salad. Toss well to coat. Let sit for 10–15 minutes to absorb flavors. -
Top with Feta (Optional):
Just before serving, sprinkle with feta cheese if using. -
Serve:
Enjoy chilled or at room temperature. Great on its own or as a side with grilled meats, pita bread, or hummus.
