Mediterranean Marinated Cauliflower Salad recipe — perfect for meal prep, potlucks, or a light healthy lunch.


🥗 Mediterranean Marinated Cauliflower Salad

Ingredients:

For the Salad:

  • 1 medium head of cauliflower, cut into small florets

  • 1 tbsp olive oil

  • Salt & pepper, to taste

  • 1/2 cup cherry tomatoes, halved

  • 1/3 cup kalamata olives, pitted & halved

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup crumbled feta cheese (optional)

  • 1/2 small cucumber, diced


For the Marinade / Dressing:

  • 1/4 cup extra virgin olive oil

  • 2 tbsp red wine vinegar or lemon juice

  • 1 tsp Dijon mustard

  • 1 garlic clove, minced

  • 1/2 tsp dried oregano

  • Salt & pepper to taste


Instructions:

  1. Roast the Cauliflower:
    Preheat oven to 425°F (220°C).
    Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper.
    Spread on a baking sheet and roast for 20–25 minutes, until golden and tender. Let cool slightly.

  2. Make the Dressing:
    In a small bowl or jar, whisk together olive oil, red wine vinegar (or lemon juice), Dijon mustard, garlic, oregano, salt, and pepper.

  3. Assemble the Salad:
    In a large bowl, combine the roasted cauliflower, cherry tomatoes, olives, red onion, cucumber, and parsley.

  4. Marinate:
    Pour the dressing over the salad. Toss well to coat. Let sit for 10–15 minutes to absorb flavors.

  5. Top with Feta (Optional):
    Just before serving, sprinkle with feta cheese if using.

  6. Serve:
    Enjoy chilled or at room temperature. Great on its own or as a side with grilled meats, pita bread, or hummus.


💡 Tips:

  • Want to make it vegan? Skip the feta or use plant-based cheese.

  • Add chickpeas or quinoa to make it more filling.

  • Can be stored in the fridge for up to 3 days.
