Mediterranean Ground Beef Stir Fry

Instructions

Heat the pan
Heat a large skillet over medium-high heat. Add 1 tbsp olive oil. -
Brown the beef
Add ground beef, season with salt and pepper, and cook until browned (5–7 minutes).
Break it up well. Drain excess fat if needed. Remove beef from pan and set aside. -
Cook the veggies
Add remaining 2 tbsp olive oil to the pan.
Sauté onion and bell pepper for 2–3 minutes until softened.
Add zucchini and cook another 2 minutes. -
Add garlic & spices
Stir in garlic, oregano, cumin, paprika, and red pepper flakes. Cook 30–45 seconds until fragrant. -
Combine everything
Return beef to the pan. Add cherry tomatoes. Toss and cook 2–3 minutes until tomatoes soften but don’t collapse. -
Finish it
Turn off heat. Squeeze in lemon juice. Taste and adjust seasoning. -
Garnish & serve
Top with feta and fresh herbs. Serve hot.
