🥪 Mediterranean Grilled Veggie & Burrata Panini
Ingredients (2 Paninis)
For the Grilled Veggies:

1 small zucchini, thinly sliced

1 small eggplant, thinly sliced

1 red bell pepper, sliced into strips

Olive oil
-
Salt & pepper
-
½ tsp dried oregano
-
½ tsp garlic powder
Other Ingredients:

1 ball of fresh burrata (4 oz)
-
4 slices of ciabatta or sourdough bread
-
2 tbsp pesto (store-bought or homemade)
-
Handful of arugula or baby spinach
-
Balsamic glaze (optional, for drizzling)

Butter or olive oil (for grilling bread)
🔥 Instructions

Prep & Grill the Veggies:

Preheat a grill pan or outdoor grill to medium-high heat.

Toss sliced zucchini, eggplant, and red pepper with olive oil, salt, pepper, oregano, and garlic powder.

Grill veggies for 3–4 minutes per side until tender and lightly charred. Set aside.

Assemble the Panini:

Spread pesto on the inside of each bread slice.
-
Layer grilled veggies evenly over two of the slices.
-
Tear the burrata and gently spread it over the veggies.
-
Add arugula on top and drizzle with balsamic glaze if desired.

Top with remaining bread slices to form a sandwich.

Grill the Panini:

Lightly butter or brush the outside of the bread.

Place in a panini press or grill pan over medium heat.

Press and grill for 3–5 minutes until golden and crisp, and the burrata is warm and melty.

Serve:

Slice in half and serve immediately with a side salad, chips, or olives.

🧀 Tips & Variations

Add sun-dried tomatoes or olives for extra punch.

Swap ciabatta with focaccia or whole grain bread for a different texture.

Don’t have a panini press? Use a skillet with a heavy pan on top to press the sandwich.
