🔥 Instructions

  1. Prep & Grill the Veggies:

    • Preheat a grill pan or outdoor grill to medium-high heat.

    • Toss sliced zucchini, eggplant, and red pepper with olive oil, salt, pepper, oregano, and garlic powder.

    • Grill veggies for 3–4 minutes per side until tender and lightly charred. Set aside.

  2. Assemble the Panini:

    • Spread pesto on the inside of each bread slice.

    • Layer grilled veggies evenly over two of the slices.

    • Tear the burrata and gently spread it over the veggies.

    • Top with remaining bread slices to form a sandwich.

  3. Grill the Panini:

    • Lightly butter or brush the outside of the bread.

    • Place in a panini press or grill pan over medium heat.

    • Press and grill for 3–5 minutes until golden and crisp, and the burrata is warm and melty.

  4. Serve:

    • Slice in half and serve immediately with a side salad, chips, or olives.

🧀 Tips & Variations

  • Add sun-dried tomatoes or olives for extra punch.

  • Swap ciabatta with focaccia or whole grain bread for a different texture.

  • Don’t have a panini press? Use a skillet with a heavy pan on top to press the sandwich.
