Instructions
Step 1: Prepare the Ginger
Slice or lightly crush the fresh ginger to release its oils.
Step 2: Boil
Add ginger to 2 cups of water.
Bring to a boil, then reduce heat and simmer for 5–10 minutes (longer = stronger).
Step 3: Strain & Cool
Remove from heat and strain out the ginger.
Let it cool to room temperature.
Step 4: Serve
Pour into a glass over ice.
Add honey and lemon juice if desired.
Garnish with rosemary or mint.
