  • 200–250g block of feta cheese

  • 1 cup cherry tomatoes (halved)

  • ½ cup red bell pepper (sliced)

  • ½ cup zucchini (sliced)

  • ¼ cup red onion (thinly sliced)

  • 3 cloves garlic (sliced or minced)

  • 3 tbsp olive oil

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • ½ tsp black pepper

  • ¼ tsp chili flakes (optional)

  • Zest of ½ lemon (optional but great)

Step 1: Preheat Oven
