Mediterranean Chicken Breast in Creamy Mushroom Sauce

Ingredients

For the Chicken

  • 2 chicken breasts (boneless)

  • 1 tsp paprika

  • 1 tsp oregano

  • 1 tsp garlic powder

  • ½ tsp black pepper

  • ½ tsp salt

  • 1 tbsp olive oil

For the Creamy Mushroom Sauce

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 cup mushrooms (sliced)

  • 4–5 garlic cloves (minced)

  • ½ cup chicken broth

  • 1 cup heavy cream

  • ¼ cup sun-dried tomatoes (chopped)

  • ¼ cup parmesan cheese (grated)

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • Fresh parsley/basil for garnish


Instructions

1. Season & Sear the Chicken

  1. Rub chicken breasts with paprika, oregano, garlic powder, salt, and pepper.

  2. Heat olive oil in a pan.

  3. Sear chicken on medium heat for 5–6 minutes per side until golden.

  4. Remove and set aside.

2. Make the Mushroom Sauce

  1. In the same pan, add butter + olive oil.

  2. Add mushrooms; cook until they soften.

  3. Add garlic and sauté 30 seconds.

  4. Pour in chicken broth → simmer 1 minute.

  5. Add heavy cream, sun-dried tomatoes, parmesan, and Italian seasoning.

  6. Cook until thick and creamy.

3. Combine

  1. Add chicken breasts back into the sauce.

  2. Simmer for 5–7 minutes until chicken is cooked through and sauce is rich.

  3. Garnish with parsley/basil.
