Ingredients

  • 2 salmon fillets

  • 2 tbsp olive oil

  • 1 tsp lemon zest

  • 2 tbsp lemon juice

  • 3 garlic cloves, minced

  • 1 tsp dried oregano

  • ½ tsp paprika

  • Salt & black pepper to taste

  • ¼ cup sun-dried tomatoes (chopped)

  • ¼ cup feta cheese (crumbled)

  • 2 tbsp chopped fresh parsley

  • 6–8 cherry tomatoes

  • Lemon slices (optional)


Instructions

1. Prepare the Salmon

  • Preheat oven to 200°C (400°F).

  • Pat salmon dry and place on a baking tray lined with foil or parchment.

  • Rub salmon with olive oil, lemon zest, lemon juice, garlic, oregano, paprika, salt & pepper.

2. Add the Mediterranean Toppings

  • Sprinkle sun-dried tomatoes over the salmon.

  • Add crumbled feta cheese.

  • Scatter cherry tomatoes around the salmon.

3. Bake

  • Bake for 12–15 minutes, depending on thickness.

  • Salmon should be juicy and flaky.

4. Garnish & Serve

  • Finish with fresh parsley and lemon slices.

  • Serve with rice, roasted potatoes, quinoa, or pasta.
