2 salmon fillets

2 tbsp olive oil

2 tbsp lemon juice

3 garlic cloves, minced

½ tsp paprika

Salt & black pepper to taste

¼ cup sun-dried tomatoes (chopped)

¼ cup feta cheese (crumbled)

2 tbsp chopped fresh parsley

6–8 cherry tomatoes

Instructions
1. Prepare the Salmon

Preheat oven to 200°C (400°F).

Pat salmon dry and place on a baking tray lined with foil or parchment.

Rub salmon with olive oil, lemon zest, lemon juice, garlic, oregano, paprika, salt & pepper.
2. Add the Mediterranean Toppings

Sprinkle sun-dried tomatoes over the salmon.

Add crumbled feta cheese.

Scatter cherry tomatoes around the salmon.
3. Bake

Bake for 12–15 minutes, depending on thickness.
