🍄✨ Easy Marinated Mushrooms

📝 Ingredients (Serves 6–8 as appetizer)

  • 1 lb small mushrooms (button or cremini)

  • 3 tbsp olive oil

  • 2 tbsp red wine vinegar (or white wine vinegar)

  • 1 tbsp lemon juice

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • ½ tsp dried thyme (or 1 tsp fresh)

  • ½ tsp red pepper flakes (optional)

  • ¾ tsp salt

  • ½ tsp black pepper

  • 2 tbsp chopped fresh parsley


👩‍🍳 Instructions

1️⃣ Clean & Prep

Wipe mushrooms clean with a damp paper towel. Trim stems if needed.

2️⃣ Cook Mushrooms

Bring a pot of salted water to a boil.
Add mushrooms and cook 4–5 minutes until just tender.
Drain well and let cool slightly.

(Alternative: sauté in a skillet with 1 tbsp olive oil for deeper flavor.)

3️⃣ Make Marinade

In a bowl, whisk together olive oil, vinegar, lemon juice, garlic, oregano, thyme, salt, pepper, and red pepper flakes.

4️⃣ Marinate

Add warm mushrooms to the marinade. Toss well.
Cover and refrigerate at least 2 hours, preferably overnight.

5️⃣ Serve

Bring to room temperature before serving.
Sprinkle with fresh parsley.
