π₯ Marinated Cucumbers, Onions, and Tomatoes
Ingredients:
2 medium cucumbers, thinly sliced
2 medium tomatoes, cut into wedges or chunks
1 small red onion or yellow onion, thinly sliced
ΒΌ cup white vinegar (or apple cider vinegar for a sweeter touch)
2β3 tbsp olive oil
1β2 tsp sugar (optional, balances acidity)
Salt and black pepper, to taste
1 tsp dried oregano or Italian seasoning
Optional: 1 tbsp fresh parsley or dill, chopped
Instructions:
Prep the veggies:
Thinly slice cucumbers and onion, and chop or wedge the tomatoes.
Make the marinade:
In a bowl or jar, whisk together vinegar, olive oil, sugar (if using), salt, pepper, and herbs.
Toss and marinate:
Add cucumbers, onions, and tomatoes to a bowl. Pour the marinade over the top and gently toss to coat everything evenly.
Chill:
Cover and refrigerate for at least 30 minutes (or up to 24 hours). The longer it sits, the more flavorful it gets!
Serve:
Serve cold or at room temperature. Great as a side dish for grilled meats, sandwiches, or just on its own!
