Low-Carb High-Protein Crepes

Ingredients: Protein: 10g

  • 3 large eggs
  • 1/4 cup cottage cheese (or ricotta cheese)
  • 1/4 cup almond flour
  • 1/2 tsp vanilla extract (optional)
  • 1 tbsp sweetener of choice (like stevia or monk fruit)
  • Pinch of salt
  • Cooking spray or a small amount of butter for the pan

Instructions:

  • In a blender or bowl, mix eggs, cottage cheese, almond flour, vanilla extract, sweetener, and salt until smooth.
  • Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.
  • Pour a small amount of the batter into the skillet, swirling to form a thin layer.
  • Cook for 1-2 minutes on each side until golden brown.
  • Repeat with the remaining batter, stacking the crepes as you go.
  • Serve with sugar-free syrup, berries, or whipped cream if desired.
