💡 Zero to Low Point Version (approx. 0–2 WW points per slice depending on your plan)


🧾 Ingredients:

  • 6 large egg whites (room temperature)

  • 1/4 tsp cream of tartar

  • Pinch of salt

  • 1/3 cup zero-calorie sweetener (like Stevia, monk fruit, or erythritol)

  • 1/4 cup cornstarch (or potato starch)

  • 1 tsp vanilla extract

  • Zest of 1 lemon (optional)

🍰 Optional Low-Point Topping:

  • 1/2 cup plain nonfat Greek yogurt

  • 1 tbsp zero-calorie sweetener

  • 1/2 tsp vanilla extract

  • Fresh berries for topping (zero points on most WW plans)


🥣 Instructions:

1. Preheat Oven:
Preheat to 325°F (160°C). Line a springform or round cake pan with parchment on the bottom only.

2. Beat Egg Whites:
In a mixing bowl, add egg whites, salt, and cream of tartar. Beat until soft peaks form.
Slowly add sweetener while continuing to beat until stiff peaks form.

3. Fold & Flavor:
Gently fold in the cornstarch, vanilla, and lemon zest (if using). Do not overmix — you want to keep it fluffy.

4. Bake:
Pour into the pan and smooth the top. Bake for 25–30 minutes or until lightly golden and springy.

5. Cool Completely:
Cool in the pan for 10 minutes, then remove and cool fully on a rack.

6. Make Yogurt Topping (Optional):
Mix Greek yogurt, sweetener, and vanilla. Chill until ready to serve.

7. Serve:
Top cake with yogurt “frosting” and berries, or enjoy plain. Light, sweet, and cloud-like!
