🍋 Lemon Chicken & Veggie Orzo Stir Fry

Ingredients

For chicken:

  • 400g chicken breast, cubed

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt & pepper to taste

For orzo & veggies:

  • 1 cup orzo pasta

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 1 carrot, thinly sliced

  • 1 small zucchini, diced

  • 1 bell pepper, sliced

  • 1 cup spinach

Lemon sauce:

  • 2 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tsp Dijon mustard

  • 1/3 cup chicken broth

  • Salt & pepper

  • Optional: red chili flakes & parmesan


👩‍🍳 Instructions

  1. Cook orzo in salted water according to package instructions. Drain & set aside.

  2. Heat olive oil in a pan, add chicken & season (paprika, salt, pepper, garlic powder). Cook until browned & done. Remove.

  3. In the same pan, add olive oil, onion & garlic, sauté until fragrant.

  4. Add carrot, zucchini, bell pepper, cook until soft.

  5. Stir in spinach until wilted.

  6. Add chicken back in.

  7. Mix all lemon sauce ingredients and pour into the pan.

  8. Add cooked orzo, toss well, cook 2 more minutes.

  9. Serve warm — top with parmesan & chili flakes (optional).
