I’ve discovered the perfect Pineapple Heaven Cake – incredibly moist with caramelized pineapple topping that melts in your mouth! Simple to make yet impressive enough for any special occasion.
- 1 box yellow cake mix (or homemade equivalent)
- 1 can (20 oz) crushed pineapple, undrained
- ½ cup sour cream
- ½ cup vegetable oil
- 4 large eggs
- 1 tsp vanilla extract
- ½ cup unsalted butter, melted
- 1 cup packed brown sugar
- 6–8 pineapple rings (fresh or canned, drained)
- Maraschino cherries (optional, for garnish)
Instructions
- Preheat oven to 350°F. Melt butter in 9×13-inch baking dish in oven.
- Sprinkle brown sugar over melted butter. Arrange pineapple rings and cherries on top.
- In large bowl, combine cake mix, undrained crushed pineapple, sour cream, oil, eggs, and vanilla. Beat for 2 minutes until well blended.
- Pour batter evenly over pineapple arrangement.
- Bake 35-40 minutes until toothpick inserted in center comes out clean.
- Let stand exactly 5 minutes, then run knife around edges and invert onto serving platter.
- Allow to cool 30 minutes before serving.
