Juicy Herb-Roasted Chicken Drumsticks with Garlic Potatoes & Yogurt Sauce

Ingredients:

For the Chicken Drumsticks:

  • 8 chicken drumsticks

  • 3 tbsp olive oil

  • 1 tbsp lemon juice

  • 2 cloves garlic, minced

  • 1 tbsp fresh rosemary or thyme (or 1 tsp dried)

  • 1 tsp paprika

  • Salt and black pepper to taste

For the Garlic Potatoes:

  • 4 medium potatoes, cut into wedges or cubes

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 tsp dried rosemary (or fresh)

  • Salt and pepper to taste

  • 1 tbsp fresh parsley (optional)

For the Yogurt Sauce:

  • 1 cup plain Greek yogurt

  • 1 tbsp tahini (optional)

  • 1 tbsp lemon juice

  • 1 garlic clove, minced

  • 1 tbsp fresh dill or parsley (optional)

  • Salt and pepper to taste


Instructions:

1. Marinate the Chicken:

  • Preheat your oven to 400°F (200°C).

  • In a bowl, mix the olive oil, lemon juice, minced garlic, rosemary (or thyme), paprika, salt, and pepper.

  • Rub this marinade all over the chicken drumsticks. Let them sit for at least 20 minutes (or longer for more flavor).

2. Prepare the Garlic Potatoes:

  • While the chicken is marinating, prepare the potatoes. Toss the potato wedges or cubes in olive oil, minced garlic, rosemary, salt, and pepper.

  • Spread them out on a baking sheet in a single layer.

  • When the chicken is ready to go in the oven, add the potatoes to the baking sheet (you can place them on the same sheet if there’s enough room, or use a second sheet).

3. Roast the Chicken and Potatoes:

  • Roast the chicken and potatoes in the oven for 30-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and crispy. You may want to flip the potatoes halfway through for even roasting.

4. Make the Yogurt Sauce:

  • While the chicken and potatoes are roasting, mix together the yogurt, tahini (if using), lemon juice, minced garlic, and fresh herbs (if using) in a small bowl.

  • Season with salt and pepper to taste.

5. Serve:

  • Once everything is done, plate the chicken drumsticks with a generous portion of garlic potatoes on the side.

  • Drizzle the yogurt sauce over the chicken or serve it on the side for dipping.


Tips:

  • If you like extra crispy skin on your chicken, you can broil the drumsticks for 2-3 minutes at the end of roasting.

  • For a bit of added heat, you can sprinkle some chili flakes into the yogurt sauce or use smoked paprika on the chicken.

  • The yogurt sauce is great as a dip for the potatoes too!
