Italian-Inspired Toasted Sandwich

Ingredients (2 sandwiches)

  • 4 slices rustic bread or sourdough

  • 2–3 tbsp basil pesto

  • 6–8 slices fresh mozzarella

  • 6–8 slices tomato

  • 6–8 slices salami or prosciutto (optional)

  • Handful of fresh basil leaves

  • 1–2 tbsp olive oil or butter

  • Salt & black pepper, to taste

  • Optional add-ons: roasted red peppers, olives, arugula, balsamic glaze


Instructions

  1. Prep the bread
    Lightly brush one side of each bread slice with olive oil or butter.

  2. Assemble
    Flip bread over. Spread pesto on the unbuttered side.
    Layer mozzarella, tomato slices, meat (if using), basil, salt & pepper.
    Top with the second slice (buttered side facing out).

  3. Toast
    Heat a pan over medium heat.
    Toast sandwiches 3–4 minutes per side until golden and the cheese melts.
    Press gently with a spatula for extra crispiness.

  4. Serve
    Slice in half. Drizzle with balsamic glaze if you like. Serve hot 🔥


Pro Tips

  • Use low heat so the cheese melts before the bread burns

  • For extra crunch, sprinkle a little parmesan on the pan before toasting

  • No pan? Use a sandwich press or air fryer (180°C / 350°F, 6–8 min)
