🍠 Honey-Roasted Sweet Potato Rounds with Feta & Herbs
Ingredients

2 large sweet potatoes, peeled and sliced into ½-inch rounds

2 tbsp olive oil

2 tbsp honey

Salt & black pepper, to taste

½ tsp smoked paprika (optional)

¼ cup feta cheese, crumbled

2 tbsp fresh parsley or cilantro, chopped

Optional: drizzle of balsamic glaze
Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a bowl, toss sweet potato rounds with olive oil, honey, salt, pepper, and smoked paprika.

Arrange rounds in a single layer on the baking sheet.

Roast for 20–25 minutes, flipping halfway through, until tender and slightly caramelized.

Remove from oven, sprinkle with crumbled feta and fresh herbs.
