🥕 Honey Roasted Carrots with Cranberries & Walnuts

Sweet, savory, and slightly tangy—this colorful side dish is perfect for holidays or an easy weeknight upgrade.


🥕 Ingredients (Serves 4)

  • 1 lb (450g) carrots, peeled and cut into sticks or diagonals

  • 1½ tbsp olive oil

  • 1½–2 tbsp honey

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried thyme (or 1 tsp fresh)

  • â…“ cup dried cranberries

  • â…“ cup chopped walnuts

  • 1 tbsp fresh parsley (optional, for garnish)

Optional add-ins:

  • 1 tsp orange zest

  • Crumbled feta or goat cheese

  • A pinch of cinnamon for warmth


🔥 Instructions

  1. Preheat
    Oven to 400°F (200°C). Line a baking sheet with parchment.

  2. Season
    Toss carrots with olive oil, honey, salt, pepper, and thyme until evenly coated.

  3. Roast
    Spread in a single layer. Roast 20–25 minutes, flipping halfway, until tender and caramelized at the edges.

  4. Add toppings
    During the last 5 minutes, sprinkle walnuts onto the tray to lightly toast.
    Remove from oven and toss with dried cranberries.

  5. Finish & Serve
    Garnish with parsley and optional cheese or orange zest. Serve warm.
