Marinate the Chicken:
In a bowl, whisk olive oil, honey, lime juice, lime zest, garlic, paprika, chili flakes, salt, and pepper.
Add chicken and marinate for at least 30 minutes (or up to 4 hours). -
Cook the Chicken:
Heat a grill pan or skillet over medium heat.
Cook chicken for 5–7 minutes per side until caramelized and internal temperature reaches 165°F (74°C).
Let rest 5 minutes, then slice. -
Prepare the Strawberry Avocado Rice:
In a large bowl, gently mix rice, strawberries, avocado, red onion, and cilantro.
Drizzle lime juice and olive oil. Toss carefully to avoid mashing avocado. -
Assemble the Stack:
Place a round mold (or small bowl) on a plate.
Press rice mixture firmly into the mold.
Remove mold carefully.
Top with sliced honey lime chicken. -
