Ingredients

For the Avocado Layer:

  • 2 ripe avocados, diced
  • 1 tablespoon lime juice
  • Pinch of salt

 

Optional Toppings:

  • Extra chopped cilantro
  • Diced tomatoes
  • Crumbled cotija or feta cheese
  • Lime wedges

Instructions

  • Marinate chicken in honey, lime juice/zest, olive oil, garlic, and spices.
  • Cook chicken until golden and done; rest and slice.
  • Cook rice with water or broth, lime juice, cilantro, and salt.
  • Toss avocados with lime juice and a pinch of salt.
