📝 Ingredients:

For the Herb Roasted Chicken:

  • 4–6 bone-in, skin-on chicken thighs or drumsticks (or a mix)

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried thyme

  • 1 tsp dried rosemary (crushed)

  • ½ tsp paprika

  • Optional: 1 tsp lemon zest or juice for brightness

For the Creamy Sauce:

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup chicken broth

  • 1 cup heavy cream (or half-and-half for lighter option)

  • ½ cup grated Parmesan cheese

  • 1 tsp Dijon mustard (optional but adds depth)

  • ½ tsp dried thyme or Italian seasoning

  • Salt and pepper to taste

  • Fresh parsley or basil for garnish


🔪 Instructions:

1. Prep and Season Chicken:

  • Pat the chicken dry with paper towels (this helps it crisp).

  • In a bowl, mix the olive oil with salt, pepper, garlic powder, onion powder, thyme, rosemary, paprika, and lemon zest/juice.

  • Rub the seasoning all over the chicken.

2. Roast the Chicken:

  • Preheat oven to 400°F (200°C).

  • Place chicken skin-side up on a baking sheet or roasting pan.

  • Roast for 35–45 minutes, or until internal temp is 165°F (75°C) and skin is golden and crispy.

  • (Optional: broil for 2–3 minutes for extra crispy skin.)

3. Make the Creamy Sauce:

  • In a large skillet or pan, melt butter over medium heat.

  • Sauté garlic and onion until soft and fragrant (about 3–4 mins).

  • Pour in chicken broth and let it reduce slightly (about 5 minutes).

  • Lower heat and stir in cream, Parmesan, Dijon mustard, and herbs.

  • Simmer until sauce thickens slightly, about 5–8 minutes. Adjust salt and pepper to taste.

4. Combine & Finish:

  • Once the chicken is done roasting, you can:

    • Pour the creamy sauce over the chicken in the pan and return it to the oven for 5–10 minutes.

    • OR serve the chicken over the sauce on a platter.

  • Garnish with chopped fresh parsley or basil.
