🥣 Hearty Vegetable Beef Soup 🍲🥕🍅

🛒 Ingredients

1 lb ground beef 
- 
1 medium onion, chopped 
- 
2 cloves garlic, minced 
- 
4 cups beef broth 
- 
2 cups potatoes, peeled and diced 
- 
1 cup carrots, sliced 
- 
1 cup green beans, chopped 
- 
1 cup corn (fresh or frozen) 
- 
1 cup peas (fresh or frozen) 
- 
1 can (14.5 oz) diced tomatoes 
- 
2 tablespoons tomato paste 
- 
1 teaspoon dried thyme 
- 
1 teaspoon dried basil 
- 
Salt and pepper, to taste

Olive oil, for sautéing 
🔪 Instructions
STEP 1: Brown the Beef
In a large soup pot or Dutch oven, heat a drizzle of olive oil over medium heat.
Add ground beef and cook until browned, breaking it apart with a spoon.
Drain excess fat if needed.
STEP 2: Add Aromatics
Stir in the chopped onion and minced garlic.
Sauté for 3–4 minutes, or until the onion is soft and translucent.
STEP 3: Combine Ingredients
Add the following to the pot:

Stir everything together well.
STEP 4: Season and Simmer
