Healthy Pumpkin Muffins
These nutritious pumpkin muffins offer a delightful and flavorful way to embrace Fall, perfect for breakfast or as a quick snack.
Ingredients :
1/2 tsp cinnamon.
1/4 tsp salt.
1/2 tbsp baking powder.
1 cup almond meal or almond flour (120g).
3 tbsp sugar or sugar-free sweetener.
1/3 cup pumpkin puree.
1 egg or flax egg.
Optional: mini chocolate chips.
Instructions :
Heat your oven to 350°F (175°C) and grease a mini muffin tin for easy muffin removal.
In a bowl, mix almond flour, sugar, baking powder, salt, and cinnamon until well blended.
Add the pumpkin puree and egg to the dry mix, stirring until the batter is smoothly combined.
Optionally, fold in chocolate chips if you desire a sweeter touch.
Spoon batter evenly into the muffin cups and bake for 10 minutes, or 15 minutes for larger sizes.
Once baked, allow them to cool in the tin, then carefully release each muffin with a knife.
