Healthy Peanut Butter Greek Yogurt Breakfast Blondies
Ingredients:
1/2 cup peanut butter
1/3 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup oat flour
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 cup mini chocolate chips (optional)
Directions:
Preheat oven to 350°F (175°C) and line a small baking pan with parchment paper.
In a bowl, whisk together peanut butter, yogurt, honey, egg, and vanilla.
Add oat flour, baking soda, and cinnamon. Stir until combined.
Fold in chocolate chips if using.
Pour batter into the pan and smooth the top.
Bake for 20–23 minutes until golden and set.
Cool completely before slicing into blondies
