📝 Ingredients (Makes 8–10 Cookies)

  • 1 cup rolled oats

  • ¼ cup sunflower seeds

  • ¼ cup pumpkin seeds

  • 2 tbsp flaxseeds

  • 2 tbsp chia seeds

  • ¼ cup chopped almonds

  • ¼ cup chopped cashews or peanuts

  • 2 tbsp sesame seeds (optional)

  • 2 tbsp honey or maple syrup

  • 2 tbsp peanut butter or almond butter

  • 1 ripe banana (mashed) OR ¼ cup applesauce

  • ½ tsp cinnamon

  • 1 pinch salt

  • 1 tsp vanilla extract (optional)


👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.

  2. In a large bowl, mix oats, all seeds, nuts, cinnamon, and salt.

  3. Add mashed banana, honey, peanut butter, and vanilla.

  4. Mix well until everything is fully coated and sticky.

  5. Scoop mixture and press firmly into round cookie shapes (they won’t spread, so flatten them).

  6. Bake for 12–15 minutes until golden brown.

  7. Cool completely before removing — they firm up as they cool.
