🍫 Healthier Brownie Bread

Moist • Fudgy • Naturally Sweetened • No Oil or Butter

Ingredients (8 slices)

  • ½ cup non-fat plain Greek yogurt

  • ¾ cup unsweetened applesauce

  • ¼ cup zero-calorie sweetener (adjust to taste)

  • 1 large egg

  • 1 teaspoon vanilla extract

  • ½ cup unsweetened cocoa powder

  • ½ cup all-purpose flour (or oat flour)

  • 1 teaspoon baking powder

  • Pinch of salt

Optional Add-ins

  • 2 tablespoons mini chocolate chips

  • 1 tablespoon espresso powder (enhances chocolate flavor)

Instructions

1️⃣ Prep

Preheat oven to 350°F (175°C).
Line or lightly spray an 8×4-inch loaf pan.

2️⃣ Mix Wet Ingredients

In a bowl, whisk together:

  • Greek yogurt

  • Applesauce

  • Sweetener

  • Egg

  • Vanilla

Mix until smooth and creamy.

3️⃣ Add Dry Ingredients

Add:

  • Cocoa powder

  • Flour

  • Baking powder

  • Salt

Stir until just combined. Do not overmix.
Fold in chocolate chips if using.

(Batter will be thick — that’s normal.)

4️⃣ Bake

Spread evenly in loaf pan.
Bake 25–35 minutes.

Check at 25 minutes:

  • Toothpick should come out with moist crumbs.

  • If wet batter appears, bake 3–5 minutes longer.

5️⃣ Cool

Cool 15 minutes in pan.
For clean slices, cool completely before cutting.

Optional Chocolate Drizzle (Like the Picture)

Melt:

  • 2 tablespoons dark chocolate chips

  • 1 teaspoon coconut oil

Drizzle over cooled loaf.

Storage

  • Room temp: 1–2 days (covered)

  • Fridge: 5 days

  • Freezer: Up to 2 months (slice first)

Q & A

❓ Is this fudgy or cakey?

It’s naturally fudgy due to applesauce and yogurt.
For cakier texture, add 1 extra tablespoon flour.

❓ Can I make it flourless?

Yes. Replace flour with:

  • ½ cup oat flour
    OR

  • ⅓ cup almond flour (texture will be denser)

❓ Can I make it egg-free?

Yes. Replace egg with:

  • 1 tablespoon ground flax + 3 tablespoons water
Let sit 5 minutes before adding.

Texture will be slightly softer.

❓ Why is my brownie bread gummy?

Common causes:

  • Underbaking

  • Too much applesauce

  • Not cooling completely

Let it cool fully before slicing.

❓ Can I make this in the air fryer?

Yes.
Air fry at 320°F for 18–22 minutes (small loaf pan).

❓ Is this Weight Watchers friendly?

It can be.
Using zero-calorie sweetener and no oil keeps points lower.
Points depend on flour choice and add-ins — I can calculate it if you tell me which WW plan you’re using.

❓ Can I increase protein?

Yes:

  • Add 2 tablespoons chocolate protein powder.

  • Reduce flour slightly if doing so.
