🌺 Hawaiian Huli Huli Chicken Stack Recipe

🍗 Ingredients

For the Huli Huli Chicken Marinade:

  • 1/2 cup soy sauce

  • 1/4 cup ketchup

  • 1/4 cup brown sugar

  • 1/4 cup pineapple juice

  • 2 tablespoons rice vinegar or apple cider vinegar

  • 2 tablespoons fresh grated ginger

  • 2 cloves garlic, minced

  • 1 tablespoon sesame oil (optional)

  • 1–2 lbs boneless, skinless chicken thighs (or breasts)

For the Glaze (reduced marinade):

  • Reserved marinade (boiled and reduced)

  • 1 tablespoon honey or brown sugar (optional, for extra stickiness)

For the Stack:

  • 2 cups cooked jasmine or basmati rice

  • 1 cup grilled pineapple slices (fresh or canned)

  • 1 cup shredded red cabbage (optional, for crunch and color)

  • 1/4 cup chopped green onions

  • Toasted sesame seeds (for garnish)

  • Sriracha mayo or spicy aioli (optional drizzle)

  • Cilantro leaves (optional garnish)


🔥 Instructions

1. Marinate the Chicken

  • In a bowl, whisk together all marinade ingredients.

  • Reserve about 1/2 cup of the marinade in a small saucepan (you’ll turn this into glaze later).

  • Pour remaining marinade over the chicken in a zip-top bag or bowl.

  • Marinate in the fridge for at least 2 hours, preferably overnight for max flavor.

2. Grill the Chicken

  • Preheat grill or grill pan over medium-high heat.

  • Remove chicken from marinade and grill for about 5–7 minutes per side, until cooked through and nicely charred.

  • Let rest 5 minutes before slicing.

3. Make the Huli Huli Glaze

  • Bring the reserved marinade to a boil in a small saucepan.

  • Simmer until it thickens into a glaze (about 5–8 minutes). Stir in honey or sugar if desired.

4. Grill Pineapple

  • Grill pineapple slices for 1–2 minutes per side, until caramelized.

5. Build the Chicken Stack

Layer in a bowl or plate:

  1. Scoop of rice

  2. Layer of shredded red cabbage (optional)

  3. Slices of grilled pineapple

  4. Sliced Huli Huli chicken

  5. Drizzle with Huli Huli glaze

  6. Garnish with green onions, sesame seeds, and optional sriracha mayo/cilantro

  • Serve with a side of macaroni salad or tropical fruit salad for a full Hawaiian plate lunch experience.

  • Add a fried egg on top for a hearty version.
