Ham and Cheese Puff Pastry Pockets
Ingredients

1 sheet puff pastry, thawed

6–8 slices ham (thinly sliced works best)

1 cup shredded cheese (Swiss, cheddar, Gruyère, or mozzarella)

1 tbsp Dijon mustard (optional but 🔥)

1 egg (for egg wash)

1 tbsp milk or water
-
Black pepper (optional)

Optional add-ins: caramelized onions, honey, or chopped chives
Instructions
1. Prep
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unroll puff pastry and cut into 6–8 equal rectangles.
2. Fill
On one half of each rectangle:

Lightly spread Dijon (if using)

Add ham

Sprinkle cheese

Add pepper or any extras
Don’t overfill—puff pastry likes room to puff 😉
3. Seal
Fold pastry over filling. Press edges with a fork to seal.
Mix egg + milk and brush tops generously.
4. Bake
Bake 18–22 minutes, until golden brown and puffed. Let cool slightly before serving (the cheese will be molten lava).
