1 lb (450g) ground beef (80/20 or fattier)

2–4 tbsp beef suet or tallow (or fat trimmings)

🍳 Instructions:

Heat the pan:
Place a skillet over medium heat. Add beef suet/tallow and let it melt fully (if using raw suet, render it down until liquid fat and crispy bits separate). -
Brown the ground beef:
Add the ground beef to the pan and break it apart with a spatula. Cook until browned and no longer pink, stirring occasionally. Don’t drain the fat — it’s part of the nutrition and flavor. -
Crack in the eggs:
Once beef is mostly cooked, crack the eggs directly over the meat.-
For a runnier result: Cover and let them steam gently until yolks are set.

For scrambled: Stir them into the beef and cook together.
