Grilled Shrimp Avocado Rice Bowls

Ingredients

For Grilled Shrimp:

  • 400 g shrimp, peeled & deveined

  • 1½ tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp paprika

  • ½ tsp black pepper

  • ½ tsp salt (or to taste)

  • ½ tsp chili flakes (optional)

  • Zest of 1 lime

  • 2 tbsp fresh lime juice


For Rice:

  • 1½ cups cooked jasmine or basmati rice

  • 2 ripe avocados, diced

Instructions


Step 1: Marinate the Shrimp

  1. In a bowl, mix olive oil, garlic, paprika, salt, pepper, chili flakes, lime zest, and lime juice.

  2. Add shrimp and toss to coat.

  3. Let marinate for 10 minutes.


Step 2: Grill the Shrimp

Grill Pan / Stovetop:

  1. Heat a grill pan over medium-high heat.

  2. Cook shrimp 1½–2 minutes per side until pink and slightly charred.

Outdoor Grill:

  • Grill skewered shrimp for 2–3 minutes per side.

Set aside.


Step 3: Prepare the Rice

  1. Fluff cooked rice.

  2. Mix with butter/olive oil, salt, and optional lime juice.


Step 4: Prepare Avocado Mix

  1. Gently toss avocado with lime juice, salt, and cilantro.
