🐟 Grilled Salmon with Mango Salsa
📝 Ingredients
For the Salmon:

4 salmon fillets (skin-on or skinless)

2 tbsp olive oil

Juice of 1 lime

1 tsp chili powder

1/2 tsp smoked paprika

Salt & pepper to taste
For the Mango Salsa:

2 ripe mangoes, diced
-
1/2 small red onion, finely chopped
-
1 small jalapeño, seeded and minced (optional)
-
1/4 cup fresh cilantro, chopped
-
Juice of 1 lime
-
Salt to taste
🔪 Instructions
1. Prepare the Salsa:
In a bowl, combine:

Diced mango
-
Red onion
-
Jalapeño
-
Cilantro
-
Lime juice
-
Salt to taste
Mix well and set aside to chill.
2. Marinate the Salmon:
In a small bowl, whisk together:

Olive oil
-
Lime juice
-
Chili powder
-
Smoked paprika
-
Salt & pepper
Brush over the salmon fillets. Let them marinate for 15–20 minutes.
3. Grill the Salmon:

Preheat grill or grill pan to medium-high.

Oil the grates or pan.

Place salmon skin-side down (if applicable) and grill for 4–5 minutes per side, or until cooked through and nicely charred.
4. Assemble & Serve:

Transfer salmon to a serving platter.

Spoon mango salsa generously over the top.

Garnish with extra lime wedges and fresh herbs.
