🐟 Grilled Salmon with Mango Salsa

📝 Ingredients

For the Salmon:

  • 4 salmon fillets (skin-on or skinless)

  • 2 tbsp olive oil

  • Juice of 1 lime

  • 1 tsp chili powder

  • 1/2 tsp smoked paprika

  • Salt & pepper to taste

For the Mango Salsa:

  • 2 ripe mangoes, diced

  • 1/2 small red onion, finely chopped

  • 1 small jalapeño, seeded and minced (optional)

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt to taste


🔪 Instructions

1. Prepare the Salsa:

In a bowl, combine:

  • Diced mango

  • Red onion

  • Jalapeño

  • Cilantro

  • Lime juice

  • Salt to taste
    Mix well and set aside to chill.

2. Marinate the Salmon:

In a small bowl, whisk together:

  • Olive oil

  • Lime juice

  • Chili powder

  • Smoked paprika

  • Salt & pepper
    Brush over the salmon fillets. Let them marinate for 15–20 minutes.

3. Grill the Salmon:

  • Preheat grill or grill pan to medium-high.

  • Oil the grates or pan.

  • Place salmon skin-side down (if applicable) and grill for 4–5 minutes per side, or until cooked through and nicely charred.

4. Assemble & Serve:

  • Transfer salmon to a serving platter.

  • Spoon mango salsa generously over the top.

  • Garnish with extra lime wedges and fresh herbs.


🍽️ Serving Ideas:

  • Serve with coconut rice or quinoa

  • Pair with grilled vegetables or a simple green salad

  • Great with tortilla chips on the side for scooping up extra salsa.
