🥭 Grilled Salmon Mango Rice Bowl 🐟

Perfect for weeknights or meal prep

Ingredients (2–3 bowls)

Salmon

  • 2 salmon fillets

  • 1 tbsp olive oil

  • 1 tsp soy sauce or tamari

  • ½ tsp honey or maple syrup

  • ½ tsp garlic powder

  • Salt & black pepper

Bowl Base

  • 2 cups cooked jasmine or basmati rice

Toppings

  • 1 ripe mango, diced

  • 1 avocado, sliced

  • ½ cup cucumber, diced

  • ¼ cup red onion, thinly sliced

  • Cilantro or green onions

Optional Drizzle (highly recommended)

  • Spicy mayo, teriyaki, or a squeeze of lime + olive oil


How to Make It

  1. Preheat grill (or grill pan) to medium-high.

  2. Brush salmon with olive oil, soy sauce, honey, garlic powder, salt, and pepper.

  3. Grill salmon 3–4 minutes per side until flaky and lightly charred.

  4. Assemble bowls: rice → salmon → mango → avocado → cucumber → onion.

  5. Finish with herbs and your sauce of choice.
