Grilled Pineapple Chicken Skewers with Sweet Chili Glaze 🍍🍗🔥

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

  • 1 cup fresh pineapple, cut into 1-inch cubes

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 green bell pepper, cut into 1-inch pieces

  • 1/4 cup olive oil

  • 2 tablespoons soy sauce

  • 2 tablespoons honey

  • 1 tablespoon fresh ginger, grated

  • 2 cloves garlic, minced

  • 1/4 cup sweet chili sauce

  • Salt and pepper, to taste

  • Skewers (if using wooden skewers, soak in water for at least 30 minutes)

Instructions:

STEP 1: Marinate the Chicken

  1. Prepare Marinade:
In a medium bowl, whisk together the olive oil, soy sauce, honey, grated ginger, minced garlic, salt, and pepper.

  2. Marinate Chicken:
Add the cubed chicken to the bowl. Mix well to ensure all pieces are evenly coated.
Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

STEP 2: Assemble the Skewers

  1. Build Skewers:
Thread marinated chicken, pineapple chunks, red bell pepper, and green bell pepper onto the skewers, alternating for color and balance.

  2. Tip: Leave a little space between pieces to ensure even cooking.

STEP 3: Grill the Skewers

  1. Preheat Grill:
Heat your grill to medium-high heat (~400°F or 200°C).

  2. Grill Skewers:
Place the skewers on the grill. Cook for 10–12 minutes, turning every 3–4 minutes to cook evenly and get grill marks.

  3. Glaze:
In the last 2–3 minutes of grilling, brush the skewers with the sweet chili sauce. Flip and brush again so all sides are glazed and slightly caramelized.

STEP 4: Serve

  1. Finish:
Remove the skewers from the grill. Optionally, drizzle with any remaining sweet chili glaze.

  2. Serve Hot:
Enjoy immediately with a side of rice, salad, or grilled veggies.

Recipe Notes:

  • Vegetarian Option: Swap chicken for tofu or tempeh.

  • Make It Spicier: Add a bit of sriracha to the marinade or glaze.

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
