🦐 Grilled Garlic Butter & Parsley Prawns

Ingredients:

  • 1 kg (2.2 lbs) large prawns (peeled and deveined, tails on if desired)

  • 4 tbsp unsalted butter (melted)

  • 4 cloves garlic (minced)

  • 2 tbsp fresh parsley (finely chopped)

  • 1 tbsp lemon juice (freshly squeezed)

  • 1 tsp lemon zest

  • 1 tbsp olive oil

  • Salt & freshly ground black pepper, to taste

  • Optional: chili flakes or smoked paprika for extra heat/smoke


Instructions:

1. Prepare the Prawns:

  • If using fresh prawns, peel and devein them. Leave the tails on for presentation if you like.

  • Pat dry with paper towels to help them grill better.

2. Make the Garlic Butter Marinade:

In a bowl, combine:

  • Melted butter

  • Minced garlic

  • Chopped parsley

  • Lemon juice

  • Lemon zest

  • Olive oil

  • Salt and pepper (plus chili flakes or paprika if using)

3. Marinate the Prawns:

  • Toss the prawns in the garlic butter mixture until well coated.

  • Cover and let marinate for 15–30 minutes in the fridge (don’t marinate longer or the acid may start to β€œcook” the prawns).

4. Preheat Grill or Grill Pan:

  • Medium-high heat.

  • Lightly oil the grates or grill pan to prevent sticking.

5. Grill the Prawns:

  • Thread prawns onto skewers (if desired) for easier flipping.

  • Grill for 2–3 minutes per side, or until pink, opaque, and slightly charred.

6. Serve:

  • Remove from grill, brush with any remaining garlic butter.

  • Sprinkle with a bit more fresh parsley and an extra squeeze of lemon.


Serving Suggestions:

  • Over a bed of rice or couscous

  • With grilled vegetables or a fresh salad

  • As part of surf & turf

  • Or with crusty bread to soak up the juices.
