Grilled Fish with Steamed Vegetables
Ingredients
For the Fish:
-
2 fish fillets (such as tilapia, cod, salmon, or snapper)
-
2 tbsp olive oil
-
1 tbsp lemon juice
-
2 garlic cloves (minced)
-
1 tsp dried herbs (thyme, dill, or oregano)
-
Salt and pepper to taste
For the Steamed Vegetables:
-
1 cup broccoli florets
-
1 cup sliced carrots
-
1 cup green beans or zucchini
-
Salt and pepper to taste
-
Optional: a drizzle of olive oil or a squeeze of lemon
Instructions
1. Marinate the Fish
-
In a small bowl, mix olive oil, lemon juice, garlic, herbs, salt, and pepper.
-
Rub the marinade over both sides of the fish fillets.
-
Let them sit for 10–15 minutes while you prep the vegetables.
2. Steam the Vegetables
-
Bring a pot of water to a boil and place a steamer basket on top.
-
Add broccoli, carrots, and green beans to the basket.
-
Cover and steam for 5–7 minutes, or until vegetables are tender-crisp.
-
Season with salt, pepper, and optionally olive oil or lemon juice.
3. Grill the Fish
-
Preheat a grill or grill pan over medium-high heat.
-
Grill fish for about 3–4 minutes per side (depending on thickness) until cooked through and flaky.
-
You can also use a stovetop pan with a little olive oil if no grill is available.
4. Serve
-
Plate the grilled fish alongside the steamed vegetables.
-
Garnish with fresh herbs or lemon wedges if desired.
Tips
-
For extra flavor, add a touch of butter or a sauce like garlic herb butter or lemon dill sauce.
-
You can use frozen vegetables – just adjust steaming time accordingly.
